Brussels with chestnuts and cranberries

Brussels sprouts are nutrient-dense, high in antioxidants and rich in compounds called glucosinolates. These compounds support gut and liver function, which helps to promote detoxification. You can substitute the chestnuts for any nut or, for an added twist, sprinkle with flaxseeds, sesame seeds and pumpkin seeds.

Ingredients for 4 portions;
- 450g organic Brussels sprouts
- 150g pre-cooked chestnuts, halved
- 50g dried cranberries, halved
- 6 organic shallots, diced
- 4tbsp olive oil
- salt and pepper

Method

  1. Preheat the oven to 180°C.

  2. Combine Brussel sprouts, chestnuts, cranberries, olive oil, salt and pepper in a large bowl and toss well. Leave to marinate for 20 -30 minutes.

  3. Spread a single layer in an oven dish and bake for 15 minutes. Toss mixture and bake for another 15 minutes, or until tender.

  4. Remove from oven, garnish with diced shallots and serve in a warm dish.
